Amazing beef and cheese enchiladas
A meal that is super easy to make and doesn't require a lot of ingredients. Can be made with one pan if using a cast iron. A dinner staple at my house!
Ingredients
- 1 lb ground beef
- 1 small yellow onion diced
- 1 15 oz jar red enchilada sauce divided
- 8 almond flour tortillas
- 12 oz monterrey jack cheese (1.5 blocks) shredded, divided
- 1 can refried beans optional*
- 2 jalapeños thinly sliced
- salt and pepper to taste
Toppings
- 1 bunch cilantro roughly chopped
- ½ red onion diced
- sour cream
Instructions
- Heat a large pan over medium heat and add 1 lb ground beef. Season with salt and pepper to taste.
- When mostly finished cooking, add onions. Cook an additional 3-4 minutes.
- Add 1 15 oz jar red enchilada sauce to beef and onion. Remove from heat.
- Preheat oven to 350 ℉.
- If using a cast iron, remove sauce from pan and into a large bowl, except 1/4 cup. If not, grab a 9×13 pan and spread 1/4 cup sauce on the bottom.
- Lay a tortilla on a plate or cutting board.
- Add a sprinkle of cheese, about 3 spoons of sauce, beans if desired, and more cheese.
- Continue with the remaining 7 tortillas, dividing cheese and sauce evenly but reserve about 1/2 cup of sauce & 1/2 cup cheese.
- Lay all of the tortillas in the pan side by side. Top with remaining 1/2 cup sauce, spreading it on the tortillas.
- Sprinkle remaining cheese on top.
- Place 2 slices of jalapeño on each enchilada. This helps you find where each tortilla is after baked & adds a little spice!
- Bake at 350℉ for 25-30 minutes, uncovered.
- Top with cilantro, red onion, and sour cream.
