Summer Strawberry Salad
Easy and delicious salad with a creamy honey mustard vinaigrette
Ingredients
- 2 cups Spinach
- 2 tbsp Pistachios roasted, salted
- 1 half Avocado, diced
- 2 oz Goat cheese fig & honey
- 4 whole Strawberries, diced
- 2 tbsp olive oil
- 1 tsp dijon mustard
- 1.5 tbsp honey
- 1 tbsp white wine vinegar
- 1 pinch salt redmond's real salt
Instructions
- Fill a medium sized bowl with spinach
- Add toppings- strawberries, pistachios, diced avocado, and crumbled goat cheese on top
- Top with dressing
Dressing
- Combine all ingredients in a small mason jar or other airtight container and shake to combine.
Notes
There is enough dressing for 2 salads. Refrigerate any leftover dressing in an airtight container for up to a week.
