Summer Strawberry Salad

Easy and delicious salad with a creamy honey mustard vinaigrette

Ingredients
  

  • 2 cups Spinach
  • 2 tbsp Pistachios roasted, salted
  • 1 half Avocado, diced
  • 2 oz Goat cheese fig & honey
  • 4 whole Strawberries, diced
  • 2 tbsp olive oil
  • 1 tsp dijon mustard
  • 1.5 tbsp honey
  • 1 tbsp white wine vinegar
  • 1 pinch salt redmond's real salt

Instructions
 

  • Fill a medium sized bowl with spinach
  • Add toppings- strawberries, pistachios, diced avocado, and crumbled goat cheese on top
  • Top with dressing

Dressing

  • Combine all ingredients in a small mason jar or other airtight container and shake to combine.

Notes

There is enough dressing for 2 salads. Refrigerate any leftover dressing in an airtight container for up to a week.
