Hearty 3 Bean Salad

This is a delicious bean salad that you can easily grab from your fridge throughout the week for a healthy snack or addition to a meal- a great way to get your fiber in!

Ingredients
  

  • 1 can kidney beans
  • 1 can black eyed peas
  • 1 can black beans
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 sweet onion, diced
  • 1/3 cup olive oil extra virgin
  • 1.5 lemons, juiced
  • salt to taste
  • pepper to taste

Instructions
 

  • Drain and rinse beans. Add to a large mixing bowl.
  • Add remaining ingredients and mix well.
  • Adjust salt to taste and enjoy! Refrigerate for up to one week in an airtight container.

Notes

This would be great with diced avocado added- I would only add it to my own portion, not the whole bowl. 
This would also make a great addition to a salad, wrap, or just eaten on its own. It could easily be transported on the go or for a picnic and tastes even better at room temperature!
