Hearty 3 Bean Salad

This is a delicious bean salad that you can easily grab from your fridge throughout the week for a healthy snack or addition to a meal- a great way to get your fiber in!
Course Appetizer, Salad, Snack
- 1 can kidney beans
- 1 can black eyed peas
- 1 can black beans
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 sweet onion, diced
- 1/3 cup olive oil extra virgin
- 1.5 lemons, juiced
- salt to taste
- pepper to taste
Drain and rinse beans. Add to a large mixing bowl.
Add remaining ingredients and mix well.
Adjust salt to taste and enjoy! Refrigerate for up to one week in an airtight container.
This would be great with diced avocado added- I would only add it to my own portion, not the whole bowl.
This would also make a great addition to a salad, wrap, or just eaten on its own. It could easily be transported on the go or for a picnic and tastes even better at room temperature!
